  • 1 large egg
  • 1 garlic clove (minced)
  • 2 tablespoons fresh lime juice
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon chili sauce
  • 1 tablespoon honey or light brown sugar
  • 1 tablespoon hoisin sauce
  • 1/3 cup chopped peanuts

Instructions

  1. In a skillet, heat 1 teaspoon of oil over medium-low heat and scramble the egg until cooked. Remove and set aside.
  2. In a bowl, whisk together minced garlic, lime juice, soy sauce, chili sauce, honey or brown sugar, and hoisin sauce.
  3. Heat the skillet on medium and add the remaining oil. Pour in the sauce mixture and cook for about 2 minutes.
  4. Stir in a flour slurry (flour dissolved in water) to thicken the sauce, cooking for an additional 3 minutes.
  5. Add spiralized zucchini noodles to the skillet and toss to coat with the sauce, cooking for another 2-3 minutes until tender yet crisp.
  6. Mix in the scrambled egg and garnish with chopped peanuts before serving.
