  • 3 garlic cloves, minced
  • 2 stalks celery, finely chopped
  • 1 ½ cups cubed potatoes
  • 2 carrots, sliced
  • ½ cup dry green or brown lentils
  • 6 cups vegetable stock
  • ⅓ cup shredded cheddar cheese
  • Optional: Fresh herbs for garnish

Instructions

  2. Add potatoes, carrots, and salt; cook for 1-2 minutes.
  3. Stir in lentils, thyme, marjoram, and vegetable stock; cover and bring to a boil.
  4. Reduce heat; simmer for 25-30 minutes until lentils are tender.
  5. Remove from heat; cool slightly and stir in cheddar cheese until melted.
  6. Blend part of the soup for creaminess if desired.
  7. Season with salt and pepper; serve garnished with fresh herbs.
