Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a stand mixer bowl, cream together softened butter, white sugar, and brown sugar until light and fluffy.
  3. Add in the egg and molasses, mixing until well combined.
  4. In a separate bowl, whisk together flour, baking soda, ground ginger, salt, ground cloves, and allspice. Gradually mix this into the wet ingredients until just combined.
  5. Prepare your rolling mixture by combining white sugar with ground cinnamon and ginger in a small bowl.
  6. Scoop dough balls about 1 inch in diameter and roll each in the cinnamon sugar mixture.
