Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter, white sugar, and brown sugar until light and fluffy.
  3. Mix in the egg, molasses, and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, ground ginger, salt, ground cloves, and allspice. Gradually add this mixture to the wet ingredients until just combined.
  5. Prepare the coating by mixing white sugar with ground cinnamon and additional ground ginger.
  6. Form dough balls about one inch in diameter and roll them in the coating mixture before placing them on a parchment-lined baking sheet.
  7. Bake for about 9 minutes or until edges are set but centers remain soft. Let cool before transferring to wire racks.
