  • 1 small onion, diced
  • 1 clove garlic, crushed
  • 1 small carrot, diced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 2 tablespoons tomato paste
  • 3/4 cup beef or chicken stock
  • 1/3 cup frozen peas
  • 15g (0.5oz) cheddar, grated
  • 25g (1oz) mozzarella, grated

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Halve the acorn squash, remove seeds, spray with olive oil, season with salt and pepper, and place on a baking sheet.
  3. Bake for 40-45 minutes until tender.
  4. In a frying pan over medium heat, brown the ground beef with onion, garlic, and carrot. Stir in spices, tomato paste, stock, and peas; simmer until thickened.
  5. Fill each squash half with the beef mixture and top with grated cheese.
  6. Return to oven for an additional 15-20 minutes until cheese is golden.
