Instructions
- Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and line them with parchment paper.
- In a mixing bowl, whisk together flour, black cocoa powder, baking soda, and salt.
- In another bowl, mix eggs, buttermilk, hot coffee, canola oil, and vanilla extract until smooth.
- Gradually combine wet ingredients with dry ingredients using an electric mixer until just combined.
- Divide batter between prepared pans and bake for 30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to a rack.
- For the blackberry compote, simmer fresh blackberries with sugar, lemon juice, zest, water, and cornstarch until thickened; let cool.
- Make buttercream by beating softened cream cheese and butter together; add powdered sugar and black cocoa powder gradually until smooth.
- Assemble the cake by layering on a serving plate: one layer of cake, blackberry compote, buttercream frosting, then top with the second layer.
- Frost the entire cake with remaining buttercream and decorate as desired.
