Description

Spiced Salmon with Cheesy Asparagus & Garlic Herb Potatoes is a vibrant, flavorful dish that seamlessly combines tender salmon with creamy asparagus and savory garlic herb potatoes. Ideal for weeknight dinners or special gatherings, this recipe is not only quick to prepare but also visually appealing.

Ingredients

Scale
  • 4 salmon fillets
  • 1 pound asparagus spears
  • 2 pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 cup shredded cheese (your choice)
  • 2 tablespoons cream cheese
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon dried rosemary
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, paprika, garlic powder, onion powder, and salt. Coat each salmon fillet in the spice mixture thoroughly.
  3. Trim the ends off the asparagus spears. In a separate bowl, mix shredded cheese with cream cheese until well combined. Spread this mixture over the asparagus.
  4. In another bowl, toss halved baby potatoes with olive oil, garlic powder, rosemary, salt, and pepper until evenly coated. Spread them out on another section of your baking sheet.
  5. Place both trays in the preheated oven. Bake for about 20-25 minutes or until the salmon is cooked through and flakes easily with a fork. The asparagus should be tender yet crisp while potatoes are golden brown.
  6. Once baked, remove everything from the oven. Serve your Spiced Salmon alongside cheesy asparagus and garlic herb potatoes for a complete meal.
