Instructions

  2. In a pan over medium heat, melt coconut oil. Sauté onion until translucent, then add garlic and ginger until fragrant.
  3. Transfer sautéed aromatics to the slow cooker. Add beef cubes, diced tomatoes, coconut milk, curry powder, salt, and pepper; stir well.
  4. Cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
  5. Prepare rice as per package instructions and bake or fry crispy fries until golden brown.
