  • 1 teaspoon chipotle chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon cumin
  • Salt and pepper to taste
  • 1 bag tortilla chips
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • ½ cup black beans (cooked or canned, drained)
  • ½ cup corn kernels
  • ½ cup diced tomatoes
  • ¼ cup sliced jalapeños
  • ¼ cup chopped red onion
  • ¼ cup chopped cilantro
  • Sour cream and guacamole, for serving
  • Lime wedges, for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add shredded tofu, chipotle powder, smoked paprika, cumin, salt, and pepper. Cook for 5–7 minutes until browned.
  2. Preheat the oven to 375°F (190°C).
  3. On a baking sheet, layer tortilla chips evenly. Top with cooked tofu mixture and sprinkle with cheese, black beans, corn, tomatoes, jalapeños, and red onion.
  4. Bake for 10–12 minutes until cheese is melted.
  5. Garnish with chopped cilantro and serve warm with sour cream and guacamole.
