  • 1 green bell pepper, sliced
  • 1 cup mashed potatoes (prepared with butter and milk)
  • 1 cup sliced carrots
  • 1 cup green beans
  • 1 tsp olive oil
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • Optional: black sesame seeds or nutritional yeast for garnish

Instructions

  1. In a skillet over medium-high heat, add the olive oil. Once hot, add beef strips and sliced bell peppers. Season with garlic powder, salt, and pepper. Sear until browned and tender.
  2. In a pot, boil peeled potatoes until tender. Drain and mash with butter and milk until creamy. Season to taste.
  3. Steam or lightly sauté carrots and green beans until just tender. Add salt and pepper.
  4. On a plate, arrange mashed potatoes topped with beef strips and bell peppers alongside the steamed veggies. Garnish if desired.
