Ingredients
- 8 pounds tomatillos (husks removed)
- 4 medium white onions (cut into wedges)
- 4 jalapeño chiles (or serrano peppers)
- 6 cloves garlic (peeled)
- 1 cup fresh lime juice
- 1/2 cup chopped fresh cilantro leaves
- Optional: salt, pepper, ground cumin
Instructions
- Preheat your oven to 450°F (232°C). Remove the husks from tomatillos and rinse them under cold water. Cut onions into wedges and prepare jalapeños by removing stems.
- Arrange tomatillos, onions, garlic, and peppers on a roasting pan. Roast for about 20-25 minutes until tender and slightly charred.
- Transfer roasted vegetables to a food processor or blender. Add lime juice, cilantro, salt, and pepper. Blend until desired consistency is reached.
- Sterilize canning jars by boiling them in water for about 10 minutes. Carefully fill each jar with hot salsa verde, leaving half an inch of headspace.
- Process jars in boiling water for about 15 minutes (adjust based on altitude) before cooling completely.
