Instructions
- Toast the shredded coconut in a skillet over medium-low heat for 3–5 minutes until lightly browned. Set aside to cool.
- Cube the pineapple and place it in a large mixing bowl. Slice the kiwis in half, scoop out the fruit with a spoon, and cut into bite-sized pieces. Add the kiwi to the bowl.
- Roll and thinly slice the mint leaves, then add them to the fruit mixture.
- In a separate bowl, zest and juice the limes. Mix in honey and whisk until combined. Pour dressing over the fruit and toss gently.
