  • ½ cup balsamic vinegar
  • 1 teaspoon honey
  • 2 medium peaches
  • 1 8-ounce ball of fresh mozzarella
  • 1 bunch fresh basil

Instructions

  1. In a small saucepan over medium heat, combine balsamic vinegar and honey. Bring to a low boil and then reduce heat to simmer for 10-15 minutes until reduced by half. Allow to cool.
  2. Slice the peaches into quarters and then each quarter into thin slices.
  3. Cut the mozzarella ball in half and slice each half into thin pieces.
  4. Tear basil leaves from stems.
  5. On a large plate, alternate layering peach slices, mozzarella, and basil leaves until all ingredients are arranged.
  6. Drizzle with the cooled balsamic reduction and season with salt and pepper before serving.
