  • 3 tablespoons olive oil (divided)
  • 1 pound ground beef
  • 1 onion (diced)
  • 2 carrots (diced)
  • 2 stalks celery (diced)
  • 5 cloves garlic (minced)
  • 3 cups tomato sauce
  • 4 cups chicken stock
  • 15 ounces fire roasted tomatoes (do not drain)
  • 1 tablespoon Italian seasoning
  • 1 cup dry pasta (I use ditalini)
  • 15 ounces red kidney beans (drained and rinsed)
  • 15 ounces cannellini beans (drained and rinsed)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup fresh parsley (chopped finely)

Instructions

  1. Heat 1 tablespoon of olive oil in a large dutch oven over medium-high heat. Add the ground beef and cook until browned. Remove from the pot and drain excess fat.
  2. In the same pot, add 2 tablespoons of olive oil and sauté diced onion, carrots, and celery until softened.
  3. Stir in minced garlic for about 30 seconds until fragrant.
  4. Add chicken stock, tomato sauce, fire-roasted tomatoes, Italian seasoning, cooked meat, and ditalini pasta to the pot. Stir well.
  5. Bring to a boil, reduce heat, cover, and simmer for 15 minutes until vegetables are tender.
  6. Stir in drained kidney beans and cannellini beans; cook for a few more minutes.
  7. Season with salt and pepper to taste; garnish with chopped parsley before serving.
