Ingredients
- 160 g all-purpose flour
- 60 g powdered sugar
- 115 g unsalted butter, cold and cubed
- 1 egg yolk
- 1 medium apple, peeled and diced
- 80 g mixed berries (fresh or frozen)
- 2 tbsp granulated sugar
- 1 tsp lemon juice
- 1/2 tsp cinnamon
- 1 tsp cornstarch
Instructions
- Prepare the shortbread crust by combining flour and powdered sugar in a food processor. Add cold butter and pulse until crumbly. Mix in egg yolk; if needed, add cold water until dough forms. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
- For the filling, toss diced apple, mixed berries, sugar, lemon juice, cinnamon, and cornstarch in a bowl until well combined.
- Preheat your oven to 180°C (350°F). Roll out chilled dough to about 0.5 cm thick and cut rounds to fit muffin tins. Place rounds in greased tins and fill with fruit mixture.
- Bake for 25–30 minutes until edges are golden brown. Allow cooling slightly before serving.
