  • 60 g powdered sugar
  • 115 g unsalted butter, cold and cubed
  • 1 egg yolk
  • 1 medium apple, peeled and diced
  • 80 g mixed berries (fresh or frozen)
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice
  • 1/2 tsp cinnamon
  • 1 tsp cornstarch

Instructions

  1. Prepare the shortbread crust by combining flour and powdered sugar in a food processor. Add cold butter and pulse until crumbly. Mix in egg yolk; if needed, add cold water until dough forms. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
  2. For the filling, toss diced apple, mixed berries, sugar, lemon juice, cinnamon, and cornstarch in a bowl until well combined.
  3. Preheat your oven to 180°C (350°F). Roll out chilled dough to about 0.5 cm thick and cut rounds to fit muffin tins. Place rounds in greased tins and fill with fruit mixture.
  4. Bake for 25–30 minutes until edges are golden brown. Allow cooling slightly before serving.
