Instructions

  1. In a Dutch oven over medium-high heat, brown the ground beef with chopped onion and minced garlic until fully cooked. Drain excess fat.
  2. Stir in taco seasoning until well combined.
  3. Add beef stock or broth, corn, black beans, diced tomatoes, tomato purée, lime juice, salt, and rice. Mix thoroughly.
  4. Bring to a boil; cover and reduce heat to low. Simmer for 20-25 minutes until rice is tender.
