Ingredients
- 2 boneless chicken breasts
- 1 tbsp olive oil
- Juice of lemon

- 1 cup cooked basmati rice
- Cucumber, sliced
- 1 cup canned chickpeas, rinsed & drained
- 1 cup Greek yogurt
- Cucumber, grated & squeezed
- 1 tbsp fresh dill, chopped
- 1 tsp lemon juice
- Optional: pinch of chili flakes
Instructions
- In a bowl, mix olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Add chicken breasts to marinate for at least 10 minutes.
- Preheat your grill or skillet over medium-high heat and cook marinated chicken for 5-6 minutes on each side until fully cooked. Slice into strips.
- For Tzatziki: Combine Greek yogurt, grated cucumber (drained), minced garlic, fresh dill, lemon juice, salt & pepper in a bowl.
- Assemble bowls by layering rice first, followed by chickpeas, cucumber slices, grilled chicken strips, and a dollop of Tzatziki. Garnish with fresh dill.
