  • 1 cup cooked basmati rice
  • Cucumber, sliced
  • 1 cup canned chickpeas, rinsed & drained
  • 1 cup Greek yogurt
  • Cucumber, grated & squeezed
  • 1 tbsp fresh dill, chopped
  • 1 tsp lemon juice
  • Optional: pinch of chili flakes

Instructions

  1. In a bowl, mix olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Add chicken breasts to marinate for at least 10 minutes.
  2. Preheat your grill or skillet over medium-high heat and cook marinated chicken for 5-6 minutes on each side until fully cooked. Slice into strips.
  3. For Tzatziki: Combine Greek yogurt, grated cucumber (drained), minced garlic, fresh dill, lemon juice, salt & pepper in a bowl.
  4. Assemble bowls by layering rice first, followed by chickpeas, cucumber slices, grilled chicken strips, and a dollop of Tzatziki. Garnish with fresh dill.
