Ingredients
- 1 grilled chicken breast, sliced
- 2 eggs
- avocado, sliced
- 1 cup romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 2 tbsp crumbled feta cheese
- 2 tbsp Kalamata olives
- 1 tbsp extra virgin olive oil
- 1 tsp apple cider vinegar or lemon juice
- Salt & black pepper to taste
- Chopped fresh parsley (optional)
Instructions
- Boil the eggs for 7-8 minutes until jammy. Transfer them to ice water, cool, peel, and quarter.
- In a mixing bowl, combine chopped romaine lettuce, diced cucumber, and halved cherry tomatoes. Toss gently.
- Assemble by layering sliced grilled chicken, avocado slices, quartered eggs, crumbled feta cheese, and Kalamata olives over the salad base.
