  • avocado, sliced

  • 2 tbsp Kalamata olives
  • 1 tbsp extra virgin olive oil
  • 1 tsp apple cider vinegar or lemon juice
  • Salt & black pepper to taste

Instructions

  1. Boil the eggs for 7-8 minutes until jammy. Transfer them to ice water, cool, peel, and quarter.
  2. In a mixing bowl, combine chopped romaine lettuce, diced cucumber, and halved cherry tomatoes. Toss gently.
  3. Assemble by layering sliced grilled chicken, avocado slices, quartered eggs, crumbled feta cheese, and Kalamata olives over the salad base.
  4. Drizzle with extra virgin olive oil and apple cider vinegar (or lemon juice). Season with salt and black pepper to taste. Garnish with chopped fresh parsley if desired.
