Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a mixing bowl, combine the first measure of all-purpose flour, powdered sugar, and cold butter. Mix until crumbly and press into the lined baking sheets.
- In another bowl, whisk together eggs, granulated sugar, the second measure of flour, baking powder, lemon juice, shredded coconut, and optional vanilla extract until smooth.
- Pour the filling over the cookie base and sprinkle additional shredded coconut on top.
- Bake for about 25-30 minutes until golden brown. Allow to cool before slicing into squares.
