  • For the topping: 1/2 cup white granulated sugar, 2 tsp lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, white granulated sugar, and light brown sugar until fluffy.
  3. Add the egg, lemon juice, vanilla extract, and lemon zest; mix until well combined.
  4. In another bowl, whisk together the sifted flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients while mixing on low speed.
  5. Gently fold in the wild frozen blueberries.
  6. Scoop tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
  7. Bake for approximately 17 minutes or until the edges are lightly golden.
  8. While baking, mix additional granulated sugar with lemon zest for the topping.
  9. Once baked, cool slightly before coating each cookie in lemon sugar.
