- 1/3 cup granulated sugar
- 1/4 cup raw or turbinado sugar (for sprinkling)
- 1 tablespoon granulated sugar
- 1 teaspoon kosher salt
- 6–9 tablespoons ice water
- 3 tablespoons salted butter
- 2 tablespoons fruit juice or broth (to replace bourbon)
- 1 teaspoon vanilla bean paste
- 1/2 teaspoon ground cinnamon
- 2/3 cup brown sugar
- 1 teaspoon vanilla extract
- 1 egg (for egg wash)
Instructions
- Make the crust by mixing flour, sugar, salt, and cold butter in a stand mixer until it resembles coarse sand. Add ice water gradually until dough forms. Chill for at least 1 hour.
- Prepare the apple filling by sautéing diced apples in butter and adding fruit juice, vanilla, cinnamon, and brown sugar until syrupy.
- Roast blackberries with sugar and vanilla until thickened to create the blackberry filling.
- Roll out chilled dough, cut pumpkin shapes, fill with desired fruit filling, seal edges, brush with egg wash, sprinkle with sugar, and bake at 375°F for about 25 minutes.
