  • 18 oz fresh blackberries
  • 1/3 cup granulated sugar
  • 1/4 cup raw or turbinado sugar (for sprinkling)
  • 1 tablespoon granulated sugar
  • 1 teaspoon kosher salt
  • 69 tablespoons ice water
  • 3 tablespoons salted butter
  • 2 tablespoons fruit juice or broth (to replace bourbon)
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)

Instructions

  1. Make the crust by mixing flour, sugar, salt, and cold butter in a stand mixer until it resembles coarse sand. Add ice water gradually until dough forms. Chill for at least 1 hour.
  2. Prepare the apple filling by sautéing diced apples in butter and adding fruit juice, vanilla, cinnamon, and brown sugar until syrupy.
  3. Roast blackberries with sugar and vanilla until thickened to create the blackberry filling.
  4. Roll out chilled dough, cut pumpkin shapes, fill with desired fruit filling, seal edges, brush with egg wash, sprinkle with sugar, and bake at 375°F for about 25 minutes.
