  • 2 teaspoons fenugreek seeds
  • 2 teaspoons nigella seeds
  • 1 tablespoon fennel seeds
  • 2 tablespoons cayenne pepper (or paprika)
  • 1 tablespoon turmeric
  • 1 teaspoon asafetida
  • ¼ to ½ cup salt
  • 1 cup avocado oil (or neutral oil)
  • 2 tablespoons mustard seeds

Instructions

  1. Toast the fenugreek, fennel, and nigella seeds in a skillet over medium heat for 3-5 minutes until fragrant. Allow to cool, then grind with asafetida.
  2. In a clean bowl, combine lime pieces with the ground spice mixture, cayenne, turmeric, and salt. Mix well.
  3. Heat oil in the same skillet and add mustard seeds until they sputter. Pour hot oil over lime mixture and stir thoroughly.
  4. Transfer everything to a sterilized jar and place it in direct sunlight for 5-7 days, turning daily for even fermentation.
