Instructions

  1. In a stand mixer bowl, mix flour, sugar, salt, and yeast. Gradually add cold milk and knead with a dough hook for about 5 minutes until soft but slightly tacky. Refrigerate for 30 minutes.
  2. Beat softened butter with flour until smooth; shape into a rectangle and refrigerate for another 30 minutes.
  3. Roll out chilled dough into a rectangle; encase the butter layer completely and seal edges.
  4. Roll the dough into a larger rectangle; fold it lengthwise into thirds. Refrigerate for 30 minutes and repeat two more times.
  5. Chill the dough overnight or for at least 4 hours.
  6. Roll out into rectangles, place chocolate at one end, roll tightly, and arrange on lined baking sheets.
  7. Proof at room temperature for an hour; then refrigerate again for an hour.
  8. Preheat oven to 400°F (204°C). Brush croissants with egg wash before baking for about 20 minutes until golden brown.
