- Roll the dough into a larger rectangle; fold it lengthwise into thirds. Refrigerate for 30 minutes and repeat two more times.
- Chill the dough overnight or for at least 4 hours.
- Roll out into rectangles, place chocolate at one end, roll tightly, and arrange on lined baking sheets.
- Proof at room temperature for an hour; then refrigerate again for an hour.
- Preheat oven to 400°F (204°C). Brush croissants with egg wash before baking for about 20 minutes until golden brown.
