Ingredients
- 12 chicken breasts
- 2 medium potatoes
- 1 small sweet potato (optional)
- 2 medium tomatoes
- 1 cucumber
- 1 cup plain yogurt (Greek or regular)
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1 tsp chili flakes
- 1 tsp paprika
- Salt & pepper to taste
Instructions
- Preheat the oven to 200C (400F).
- Marinate chicken with olive oil, oregano, garlic powder, chili flakes, salt, and pepper. Bake on a baking sheet for 20-25 minutes until cooked through.
- Toss potato wedges (and sweet potato fries if using) in olive oil, paprika, salt, and pepper; roast on another tray for 25-30 minutes.
- Combine chopped tomatoes and cucumber in a bowl; season with salt and pepper, adding olive oil or vinegar if desired.
- Mix yogurt with dried mint or dill and minced garlic; chill until serving.
- Serve everything together and enjoy!
