  • 12 chicken breasts
  • 2 medium potatoes
  • 1 small sweet potato (optional)
  • 2 medium tomatoes
  • 1 cucumber
  • 1 cup plain yogurt (Greek or regular)
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp chili flakes
  • 1 tsp paprika
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 200C (400F).
  2. Marinate chicken with olive oil, oregano, garlic powder, chili flakes, salt, and pepper. Bake on a baking sheet for 20-25 minutes until cooked through.
  3. Toss potato wedges (and sweet potato fries if using) in olive oil, paprika, salt, and pepper; roast on another tray for 25-30 minutes.
  4. Combine chopped tomatoes and cucumber in a bowl; season with salt and pepper, adding olive oil or vinegar if desired.
  5. Mix yogurt with dried mint or dill and minced garlic; chill until serving.
  6. Serve everything together and enjoy!
