  • 175 g Baking spread (or butter) (softened, unsalted)
  • 175 g Caster sugar
  • 3 Eggs (large)
  • 2 tsp Vanilla extract
  • 175 g Self-raising flour
  • 25 g Black food coloring
  • 200 g Butter (softened, unsalted)
  • 400 g Icing sugar
  • 1 tsp Vanilla extract
  • 12 tbsp Milk
  • Green food coloring
  • Yellow food coloring
  • 150 g Tinned custard
  • Candy eyes
  • Green sprinkles

Instructions

  1. Preheat your oven to 140C Fan/325F/Gas Mark 3. Line a cupcake tin with black cupcake cases.
  2. Beat baking spread and caster sugar until fluffy. Add eggs and vanilla; mix well.
  3. Fold in self-raising flour and black food coloring until combined.
  4. Divide batter into cases and bake for 25-30 minutes until a skewer comes out clean.
  5. Cool completely, then core cupcakes and fill with colored custard.
  6. Prepare buttercream by mixing softened butter and icing sugar, adding milk and food colorings as desired.
  7. Frost cupcakes and decorate with candy eyes and sprinkles.
