- cup cooked rice (brown or white)
- cup corn kernels
- cup green beans, chopped
- 1 tsp soy sauce or olive oil
- Pinch of black pepper
- cup broccoli florets
- cup cauliflower florets
- tsp olive oil
- Salt, pepper, garlic powder, to taste
Instructions
- Preheat oven to 400°F (200°C). Toss broccoli and cauliflower with olive oil, salt, pepper, and garlic powder. Spread on a baking sheet and roast for 20-25 minutes.
- Season chicken breast slices with olive oil, garlic powder, paprika, salt, and pepper. Grill or pan-sear for 5-6 minutes per side until fully cooked.
- In a pan over medium heat, sauté corn kernels and green beans in olive oil or soy sauce until tender. Mix in cooked rice until heated through.
- On a plate, serve grilled chicken alongside veggie rice and roasted broccoli-cauliflower.
