Ingredients
- 1 chicken breast, cut into chunks
- 1 cup sweet potatoes, peeled & cubed
- 1 cup broccoli florets
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt & black pepper to taste
- Optional: chili flakes, lemon juice
Instructions
- Preheat oven to 400°F (200°C). Toss sweet potato cubes in half of the olive oil, smoked paprika, salt, and pepper. Spread on a baking tray and roast for 20-25 minutes until golden brown.
- Season chicken chunks with garlic powder, onion powder, salt, and pepper. Heat grill pan over medium heat with remaining olive oil. Grill chicken for about 6-8 minutes until charred and fully cooked.
- In another pan, sauté broccoli in olive oil for about 5-6 minutes until bright green and tender. Season as desired.
- Assemble your power plate by arranging chicken, roasted sweet potatoes, and sautéed broccoli on a plate. Drizzle with lemon juice if desired.
