- 1 large chicken breast
- 2 medium sweet potatoes
- 1 ripe avocado
- Juice of 1/2 lime
- 1 cup cherry tomatoes, halved
- 1/2 avocado, diced
- 1/4 small red onion, thinly sliced
- 3 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt & pepper to taste
Instructions
- Preheat oven to 200C (400F).
- Cut sweet potatoes into wedges, toss with 1 tbsp olive oil, 1/2 tsp smoked paprika, and salt. Spread on a baking sheet and bake for 20-25 minutes until crispy.
- Season the chicken breast with 1 tbsp olive oil, 1/2 tsp paprika, 1/2 tsp garlic powder, salt, and pepper. Grill over medium heat for 6-7 minutes per side until cooked through.
- Mash the ripe avocado with lime juice in a bowl; season with salt and pepper.
- In another bowl, mix cherry tomatoes, diced avocado, thinly sliced red onion, 1 tbsp olive oil, salt, and pepper.
- Assemble the bowl by layering sweet potato fries, sliced grilled chicken, a scoop of guacamole, and the tomato-avocado salad.
