Ingredients

  • 1 large chicken breast
  • 2 medium sweet potatoes
  • 1 ripe avocado
  • Juice of 1/2 lime
  • 1 cup cherry tomatoes, halved
  • 1/2 avocado, diced
  • 1/4 small red onion, thinly sliced
  • 3 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 200C (400F).
  2. Cut sweet potatoes into wedges, toss with 1 tbsp olive oil, 1/2 tsp smoked paprika, and salt. Spread on a baking sheet and bake for 20-25 minutes until crispy.
  3. Season the chicken breast with 1 tbsp olive oil, 1/2 tsp paprika, 1/2 tsp garlic powder, salt, and pepper. Grill over medium heat for 6-7 minutes per side until cooked through.
  4. Mash the ripe avocado with lime juice in a bowl; season with salt and pepper.
  5. In another bowl, mix cherry tomatoes, diced avocado, thinly sliced red onion, 1 tbsp olive oil, salt, and pepper.
  6. Assemble the bowl by layering sweet potato fries, sliced grilled chicken, a scoop of guacamole, and the tomato-avocado salad.
