Ingredients

Scale
  • 4 ½ cups all-purpose flour
  • 1 ⅓ cups dark brown sugar
  • 2 teaspoons ground cinnamon
  • 3 teaspoons ground ginger
  • ¾ teaspoon salt
  • 1 teaspoon baking soda
  • ½ teaspoon ground cloves
  • 1 cup unsalted butter, cold and cubed
  • ½ cup unsulphured molasses
  • 1 teaspoon vanilla extract
  • ¼ cup milk
  • ½ cup powdered sugar for coating
  • ½ cup granulated sugar for coating

Instructions

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together cold cubed butter, dark brown sugar, and molasses until fluffy (about 3 minutes). Add vanilla extract and milk.
  3. In another bowl, whisk together flour, cinnamon, ginger, salt, baking soda, and cloves. Gradually mix into the wet ingredients until combined; dough may appear crumbly.
  4. Scoop about three tablespoons of dough per cookie ball and roll in a mixture of powdered sugar and granulated sugar until fully coated. Place on prepared sheets and flatten slightly.
  5. Chill cookie balls in the refrigerator for one hour to maintain shape during baking.
  6. Bake for 10-12 minutes until cracked on top but soft in the center. Allow to cool on baking sheets for about 10 minutes before transferring to wire racks.
