- 10 tablespoons unsalted butter (room temperature)
- ½ cup granulated sugar
- 2 cups Fruity PEBBLES™ Cereal (divided)
- 1 large egg (room temperature)
- 1 teaspoon vanilla extract
- 1¾ cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 8 large vegan marshmallows
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together butter, sugar, and ½ cup Fruity PEBBLES™ in a mixing bowl until light and fluffy. Add egg and vanilla; mix well.
- Combine flour, baking soda, and salt in another bowl. Gradually mix into the wet ingredients until just combined. Fold in 1 cup Fruity PEBBLES™.
- Scoop dough balls (3-4 tablespoons), flatten them, place a marshmallow in the center, wrap dough around it, and roll in remaining cereal. Place on parchment-lined baking sheet.
- Bake for 8-11 minutes until marshmallows ooze slightly. Cool before transferring to a wire rack.
