- 1–2 globe eggplants (approximately 2 lbs)
- 3 tablespoons extra virgin olive oil
- 2–3 garlic cloves, finely chopped
- 2–3 tablespoons roasted tahini
- Juice of one lemon (approximately 2 1/2 tablespoons)
- Salt and cayenne pepper to taste
- Chopped parsley for garnish
Instructions
- Preheat the oven to 400°F (204°C).
- Cut eggplants in half lengthwise. Poke holes in them with a fork and drizzle with olive oil.
- Place cut side down on a foil-lined baking sheet and roast for 35-40 minutes until tender.
- Let cool for 15 minutes, then scoop out the flesh into a bowl.
- Mix in remaining ingredients until smooth, reserving some olive oil for garnish.
- Serve with pita bread or crudités, drizzled with olive oil.
