Ingredients
- 4 thin boneless, skinless chicken breasts
- 1 cup flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 teaspoons Italian seasoning
- 2 tablespoons olive oil
- 12 oz spaghetti
- 4 tablespoons butter
- 1 small yellow onion, chopped
- 4 garlic cloves, minced
- 2 small tomatoes, diced
- 1 tablespoon flour
- 1 cup heavy cream
- 1 cup white grape juice
- ½ cup shredded Parmesan
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon crushed red pepper flakes
Instructions
- Cut chicken horizontally if thick. Pat dry with paper towels.
- In a mixing bowl, combine flour, salt, pepper, garlic powder, and Italian seasoning. Coat the chicken breasts in the flour mixture until well covered.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for about 4-5 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add chopped onion and minced garlic; cook for about 2 minutes until softened.
- Stir in diced tomatoes and flour; mix to combine well. Gradually pour in heavy cream and white grape juice while stirring continuously.
- Add Italian seasoning, salt, and crushed red pepper flakes; let simmer for 5-7 minutes until slightly thickened. Stir in shredded Parmesan cheese until melted and smooth.
- Boil water in a large pot with a pinch of salt. Add spaghetti and cook according to package instructions until al dente. Drain but do not rinse.
- Add the cooked spaghetti directly into the sauce; toss gently to coat the pasta evenly. Return cooked chicken on top of the pasta; let heat through for about 5 more minutes. Serve immediately with extra Parmesan cheese if desired.
