  • 1 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 cup dry white grape juice or chicken broth
  • Fresh spinach (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Season chicken with salt and pepper, then add to the pot. Cook until browned (5–7 minutes), then set aside.
  2. In the same pot, add chopped onion and sauté until translucent (3–4 minutes). Stir in minced garlic and cook for another minute.
  3. Add pasta and enough water to cover by an inch. Bring to a boil; cook according to package instructions until al dente. Drain excess water while retaining some liquid.
  4. Return the chicken to the pot along with fresh spinach if desired. Pour in grape juice or chicken broth; stir well and heat through for an additional 2–3 minutes.
