Ingredients

Scale
  • 1 lb boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 12 oz linguine pasta
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add linguine and cook until al dente, about 9–11 minutes. Reserve 1/2 cup of the pasta water, then drain and set aside.
  2. In a large skillet over medium-high heat, add olive oil and 2 tablespoons butter. Once hot, add chicken strips and season with Cajun seasoning, garlic powder, salt, and pepper. Sear the chicken until golden and fully cooked, about 6–8 minutes per side. Remove from heat and set aside, loosely covered to stay warm.
  3. In the same skillet used for the chicken, melt 2 tablespoons butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Pour in heavy cream and milk; bring to a gentle simmer. Stir in Velveeta cubes until melted completely.
  4. Add shredded mozzarella and Parmesan cheese; stir constantly until the sauce is smooth, thick, and creamy. Season with salt and pepper; thin out sauce with reserved pasta water if needed.
  5. Toss the cooked linguine into the sauce until every strand is coated in the rich, cheesy garlic cream.
  6. Plate servings of creamy linguine topped or flanked with seared garlic chicken strips. Garnish with chopped parsley if desired.
