  • 2 tablespoons instant espresso powder

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon instant espresso powder

Instructions

  1. Preheat oven to 325°F (163°C). Grease a springform pan and line with parchment paper.
  2. Combine crushed cookies and melted butter; press into the bottom of the pan. Bake for 10 minutes and cool.
  3. Beat cream cheese, sugar, and cornstarch until smooth. Add eggs one at a time. Mix in sour cream, heavy cream, espresso powder, and vanilla extract.
  4. Pour filling over the crust and bake for 50-55 minutes until set with a slight jiggle in the center.
  5. Cool gradually in the oven with the door ajar for an hour; then chill in the refrigerator for at least 6 hours.
  6. Whip heavy cream with powdered sugar and espresso powder until stiff peaks form. Top chilled cheesecake before serving.
