  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix brown sugar, softened butter, and cinnamon for the filling.
  3. In a large bowl, combine all dry ingredients.
  4. Cream cold butter and granulated sugar until smooth; add eggs and vanilla.
  5. Gradually incorporate dry ingredients into the wet mixture.
  6. Shape dough into a rectangle, spread filling, roll up tightly, and cut into pieces.
  7. Bake on a parchment-lined sheet for 9-11 minutes until golden.
  8. Cool before frosting with cream cheese mixture.
