Ingredients

Scale
  • 7 9-inch tortilla shells
  • 1 cup graham cracker crumbs
  • 1 1/2 tablespoons granulated sugar
  • 1/3 cup butter (melted)
  • 8 ounces cream cheese (room temperature)
  • 3 tablespoons cheesecake instant pudding mix
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped strawberries
  • 3/4 cup strawberry glaze

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter until well mixed.
  2. Lay the tortilla shells on a baking sheet lined with parchment paper. Spoon some of the crumb mixture into each shell, pressing it gently against the sides to form a crust.
  3. Bake in the preheated oven for about 11 minutes until golden brown. Allow them to cool completely.
  4. In a mixing bowl, beat together room temperature cream cheese and powdered sugar until smooth.
  5. Add in the cheesecake pudding mix and vanilla extract; blend well.
  6. In another bowl, whip heavy cream until stiff peaks form.
  7. Gently fold whipped cream into the cream cheese mixture until fully combined.
  8. Once taco shells are cool, fill each shell with the cheesecake filling using a piping bag or spoon.
  9. Top with chopped strawberries and drizzle with strawberry glaze before serving.
