Instructions

  1. Preheat the oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  3. In another bowl, beat eggs with granulated and brown sugar until creamy. Add vanilla extract.
  4. Gradually mix dry ingredients into wet ingredients; fold in grated carrots and optional walnuts.
  5. Spread batter evenly in prepared pan and bake for 10–12 minutes until springy.
  6. Invert onto a kitchen towel dusted with powdered sugar and roll up the cake while warm; let cool completely.
  7. Beat cream cheese with powdered sugar and butter until smooth; spread over cooled cake and re-roll.
