  • 12 medium green tomatoes, chopped, cored, peeled
  • 510 jalapeño peppers, seeded, finely chopped
  • 2 large red onions, chopped
  • 1/2 cup lime juice
  • 1/2 cup finely chopped cilantro
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp ground black pepper

Instructions

  1. Prepare your water-bath canner with enough water to cover jars by at least an inch.
  2. Sterilize jars by simmering in boiling water until ready for use.
  3. In a large saucepan, mix chopped green tomatoes, jalapeños, red onions, and lime juice.
  4. Bring this mixture to a boil over medium heat.
  5. Stir in cilantro, cumin, oregano, salt, and black pepper; simmer for about 5 minutes.
  6. Ladle hot salsa into sterilized jars leaving half an inch of headspace.
  7. Remove air bubbles with a spatula and seal jars tightly with lids and rings.
  8. Process jars in the water-bath canner for 20 minutes.
  9. Let jars cool completely on a clean surface for about 24 hours before checking seals.
