Ingredients
- 12 medium green tomatoes, chopped, cored, peeled
- 5–10 jalapeño peppers, seeded, finely chopped
- 2 large red onions, chopped
- 1/2 cup lime juice
- 1/2 cup finely chopped cilantro
- 2 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp ground black pepper
Instructions
- Prepare your water-bath canner with enough water to cover jars by at least an inch.
- Sterilize jars by simmering in boiling water until ready for use.
- In a large saucepan, mix chopped green tomatoes, jalapeños, red onions, and lime juice.
- Bring this mixture to a boil over medium heat.
- Stir in cilantro, cumin, oregano, salt, and black pepper; simmer for about 5 minutes.
- Ladle hot salsa into sterilized jars leaving half an inch of headspace.
- Remove air bubbles with a spatula and seal jars tightly with lids and rings.
- Process jars in the water-bath canner for 20 minutes.
- Let jars cool completely on a clean surface for about 24 hours before checking seals.
