  • 1 can diced tomatoes (14.5 oz)

  • 1 cup ditalini pasta
  • 1 pound chicken breasts or tenders
  • 1 cup grated parmesan cheese

Instructions

  1. In a Dutch oven over medium heat, melt butter and sauté onions and garlic until tender. Stir in 1 tablespoon of Cajun seasoning.
  2. Remove from heat and add chicken broth, diced tomatoes (with juice), and heavy cream. Return to heat, bring to a boil then simmer.

  4. Season chicken with remaining Cajun seasoning; cook in a skillet until fully cooked. Chop into bite-sized pieces.
  5. Lower heat on soup; stir in parmesan cheese until melted, add cooked chicken, and simmer for an additional few minutes.
