- 1 lb boneless, skinless chicken breasts, cut into thick bite-sized pieces
- 12 oz rotini pasta
- 2 tbsp olive oil
- 2 tbsp butter
- 1 tsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and black pepper, to taste
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup whole milk
- 6 oz Velveeta cheese, cubed
- 1 cup shredded mozzarella cheese
- 1 cup freshly grated Parmesan cheese
- 1 tsp Cajun seasoning (for the sauce)
- Chopped parsley (for garnish, optional)
Instructions
- Cook the rotini in boiling salted water until al dente (8-10 minutes). Reserve ½ cup of pasta water, then drain and set aside.
- Season chicken pieces with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
- Heat olive oil and butter in a skillet over medium-high heat. Sear the seasoned chicken until golden-brown and cooked through (4-5 minutes per side). Remove from pan.
- In the same skillet, sauté minced garlic for 30 seconds until fragrant.
- Stir in heavy cream and milk, then add Velveeta cubes until melted and smooth.
- Gradually mix in mozzarella and Parmesan cheeses until thickened. Add more reserved pasta water if needed.
- Toss cooked rotini into the creamy sauce until well coated.
- Serve hot with seared chicken on top or alongside.
