  • 1 lb boneless, skinless chicken breasts, cut into thick bite-sized pieces
  • 12 oz rotini pasta
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp Cajun seasoning (for the sauce)
  • Chopped parsley (for garnish, optional)

Instructions

  1. Cook the rotini in boiling salted water until al dente (8-10 minutes). Reserve ½ cup of pasta water, then drain and set aside.
  2. Season chicken pieces with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
  3. Heat olive oil and butter in a skillet over medium-high heat. Sear the seasoned chicken until golden-brown and cooked through (4-5 minutes per side). Remove from pan.
  4. In the same skillet, sauté minced garlic for 30 seconds until fragrant.
  5. Stir in heavy cream and milk, then add Velveeta cubes until melted and smooth.
  6. Gradually mix in mozzarella and Parmesan cheeses until thickened. Add more reserved pasta water if needed.
  7. Toss cooked rotini into the creamy sauce until well coated.
  8. Serve hot with seared chicken on top or alongside.
