  • 1 tablespoon butter
  • 1/2 medium onion, chopped
  • 2 sticks celery, chopped small
  • 2 medium carrots, peeled & chopped
  • 1 tablespoon flour
  • 1 (1 ounce) packet ranch seasoning
  • 4 cups chicken broth
  • 1/4 cup Frank's Red Hot Sauce
  • 1.5 pounds chicken breasts
  • 8 ounces cream cheese
  • Salt & pepper to taste
  • Optional: Blue cheese
  • Optional: Scallions

Instructions

  1. In a large pot, heat olive oil and butter over medium heat. Sauté chopped onion, celery, and carrots for about 7 minutes until tender.
  2. Stir in flour and ranch seasoning, mixing well. Gradually add chicken broth and Frank's Red Hot Sauce while stirring continuously.
  3. Add whole chicken breasts to the pot; bring to a boil. Reduce heat to low, cover, and simmer for 12 minutes. Remove chicken, chop into bite-sized pieces.
  4. Return chicken to the pot, then add cream cheese, stirring until melted and combined. Season with salt and pepper to taste.
  5. Serve hot in bowls garnished with blue cheese or scallions if desired.
