- 1/2 cup beef broth
Instructions
- Heat vegetable oil in a heavy-bottomed pot over medium heat until shimmering.
- Sauté the chopped onion until translucent, about 5 minutes. Add minced garlic and grated ginger; stir until fragrant.
- Mix in red curry paste, ground cumin, coriander, turmeric, cinnamon, and cayenne pepper. Cook for an additional 2-3 minutes.
- Increase heat to medium-high and brown the beef chunks on all sides for about 5–7 minutes.
- Pour in coconut milk and beef broth; bring to a gentle simmer while scraping up any browned bits from the pot.
- Reduce heat to low, cover, and let simmer for about 1.5 to 2 hours until the beef is fork-tender.
