- Salt & freshly cracked black pepper, to taste
- Avocado, sliced

- Preheat your oven to 400F (200C). Toss the sweet potato cubes with olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 20-25 minutes until golden and tender.
