- 1 1/4 pounds boneless skinless chicken thighs or breasts

- 1/2 teaspoon black pepper
Instructions
- Sauté diced onion, sliced leek, carrots, and celery with salt in olive oil until soft.
- Add garlic, turmeric, and poultry seasoning; sauté until fragrant.
- Pour in chicken broth and coconut milk; add chicken. Bring to a simmer and cook until chicken is tender.
